I am on a mild health kick currently. I am trying to work out at least 5 days a week, eat healthy, and get enough sleep. Sounds so easy in theory, right? Shit, was I wrong. Said healthy kick was my initial motivation to try and make oat bran muffins. I was not totally sold at first that they were going to taste even halfway decent. However, I was pleasantly surprised! Check out the recipe below. I just used the one off my box of oat bran, because, I’m really creative and all. Comments and additions in BOLD! Bran on, bitches!
CHOCOLATE CHIP OAT BRAN MUFFINS
ALL THESE THINGS
2 and 1/4 cups oat bran hot cereal, uncooked
1 tablespoon baking powder
1/2 teaspoon salt
3/4 cup milk (I used almond/coconut milk blend)
1/3 cup honey (I prefer raw honey)
2 tablespoons vegetable oil (I am sure any mild flavored oil would work fine instead)
LOTS OF CHOCOLATE CHIPS
1/4 cup chopped nuts (I omitted nuts this go around)
1/4 cup rasins (I HATE RAISINS)
Heat oven to 425.
Line muffin pan with 12 paper baking cups, or spray bottoms with non-stick cooking spray.
Combine the dry ingredients and mix well.
Add combined milk, eggs, honey, and oil and mix just until the dry ingredients are moistened.
Fill prepared muffins cups.
Bake 15 to 17 minutes or until the muffins are golden brown.
