I have recently turned to Instagram for fitness motivation, workout ideas, and new healthy recipes. Low and behold, I came across this recipe, and since I had a few lemons in my fridge and a huge bag of chia seeds, I decided to give it a try. I ALWAYS keep chia seeds around. I have a confession, that isn’t really that juicy, but I LOVE HALLOWEEN. Like, A LOT. I also love Halloween parties, and baking for my friends. There is really nothing better than your friends raving about your treats. It’s a wonderful feeling. In the spirit of the occasion, I prepared some AMAZING confetti cake batter cookies for my friend’s Halloween party. I found the recipe on Baked by Rachel. I didn’t think it was possibly to create such an incredibly delicious dessert with no dairy products… My mini me twin is vegan so we decided to give this recipe from Veggy Wood a try. We only ate half the pan in the first sitting, sooo I guess it turned out okay. The recipe looks super long and intimidating, but don’t worry. It’s not difficult at all. Purchasing lady fingers cuts out a lot of the prep time.
I was really really craving carbs today. So, I went in search of a (quick) relatively healthy recipe. The quick requirement cut out lots of bread options… Okay, pretty much most traditional bread recipes. I decided upon this Lemon Scone recipe. I had all the ingredients (for once!) and it had very good reviews. They turned out so amazingly soft, flaky, and buttery. I nearly ate the entire batch straight after I took them out of the oven. Seriously. So. Good.
Last night one of my best friends and I were having a wine and movie girls night. We felt like making some dessert, and some brownies sounded just about perfect. We decided to make my Black Bean Brownie recipe from few posts back (or check out the recipe below). My original post I didn’t add anything special to the brownies, but last night, I found some slightly stale marshmallows in my pantry and there were no other options but to make s’mores brownies. THESE COOKIES ARE THE SHIT. This recipe is just from the back of the bag of Reese’s peanut butter chips that you can buy at most grocery stores. It is hands down one of my favorite recipes.
