In attempt to be more conscious of the processed foods I am putting in my body, I decided to try to make my own English muffins. I was a little bit intimidated, but for my first attempt I was quite pleased! I found a recipe from Alton Brown on the Food Network website, but I ended up preparing them a bit differently than the original recipe. See my notes at the bottom. BAKE UP, BITCHES!
I was really really craving carbs today. So, I went in search of a (quick) relatively healthy recipe. The quick requirement cut out lots of bread options… Okay, pretty much most traditional bread recipes. I decided upon this Lemon Scone recipe. I had all the ingredients (for once!) and it had very good reviews. They turned out so amazingly soft, flaky, and buttery. I nearly ate the entire batch straight after I took them out of the oven. So, I ran in a 5k this weekend, and I was looking for a recipe to make for breakfast with some protein and carbs to make sure I had lots of energy before I ran. I found this awesome recipe on bodybuilding.com for pumpkin protein bars. I decided to try it out, and was happily surprised. The bread turned out super moist and delicious. Definitely going to make this one again. A great plus, the recipe is (basically) fat free too. Amazing! (more…)
This morning while I was looking for something to eat for breakfast, I realized that my cupboards were particularly bare… like, if someone broke in it might look like no one actually lived here. I am kind of infatuated with the idea of the Paleo diet. I don’t completely follow it, but I am definitely trying to make changes in my diet and food choices. I came across this Paleo Baked Apple Crumble recipe from The Ginger Juicer, and obviously I had to make it immediately. Sorry, more muffins. I really really like muffins. Like, a lot. I’ve mentioned I’m always rushing around in the morning because I’d much rather sleep in than have a calm, relaxing morning. I like the challenge of sleeping in as late as possible, then trying to get ready as fast as I can and still make it to my 9 am meetings at work. Rarely am I late. I take pride in my routine. (more…)

When I said I was in love with PaleOMG, I was not kidding. Sorry, I’m not sorry. Today I made Juli’s Snack Attack: Chocolate Chip Cookie Dough Protein Balls. This is my shit. In my opinion, ‘balls’ should’ve been spelled ‘bawls,’ but that’s irrelevant. I made these once before and they turned out amazing. Today I was feeling super inspired by the Protein Pumpkin Pie Chia Pudding recipe from PaleOMG that I recently blogged about, here. Since it turned out so well I wanted to try my luck at another chia breakfast pudding recipe. I happened to have two lemons in my fridge that had been there for a while, so I decided to put them to use.
